🎉 Happy belated birthday to our amazing Chef Perry! If you know, you KNOW — Perry is as incredible in personality as he is in talent.

What a journey it’s been watching him grow these past few years: from the Blue Food Truck better known as Katsu Kart, dishing out your favorite sandos and loaded fries, to creating DŌZO, a Japanese American kitchen he runs alongside Chef John Gambler (another familiar face from the truck!).

DŌZO outgrew their first brick-and-mortar and now have their very own space off East Blvd — and we couldn’t be more grateful to be part of this team, especially with folks like Perry leading the way.

While the kitchen team has worked hard to develop new menus for lunch and dinner, the guys behind the bar have really brought something special to DŌZO. We have a small, but mighty list of thoughtfully crafted cocktails developed by @seanjteague. There’s also a carefully selected by-the-glass sake program, specifically designed for a unique experience of tasting sake that is typically reserved for those committing to full bottle price.

Our hope is to encourage those who are unfamiliar to explore new levels of sake and introduce great quality sake to Charlotte at an accessible price point. 🍶

Huge kudos to Sean for paving the way for our bar program, and shout out to Deron for holding it down hospitality and talent wise. Proud to have you both helping us make DŌZO what it is.

📋 If you join our waitlist, please be sure to arrive 5–10 minutes before your scheduled seating time
🧑‍🧑‍🧒‍🧒 We ask that all members of your party are present at the time of seating
⏳ If your party is not complete, we’ll need to push your seating to the next available time slot.
✨ There is a 10-minute grace period before we move on to the next guests waiting!

The Beef Tataki is extra special to Chef Perry, as it’s a signature dish passed down from his father. We finally got to cook in the space last night for friends and family. 🖤 It felt good! Shout out to this amazing opening team.

After several months of work to bring new life to this space at 1419 East Blvd, we are happy to announce that we will be opening on January 29th for lunch and dinner services. It was no small task to complete this project and required drawing upon the resources accrued over the last five years since our journey in our little blue katsu truck began, without which none of this would have been possible. Dozo Japanese-American Kitchen on East Blvd. will bring the vibes set forth in our Wesley Heights location to a new level.

Every inch of this new space has been thoroughly considered. With the help of Jason and Jeremy Calamusa of @8lincoln30, beautiful custom woodwork and design are showcased throughout the entire building. In homage to our time running the streets of Charlotte in our food truck, we brought in our long-time collaborative artist @cheeks.clt to tag our main wall space with an incredible mural, done in collaboration with @qn.vu.

Over the past year we have felt a tremendous amount of support and excitement for our work here in Wesley Heights at Dōzo Japanese American Kitchen at the City Kitch. We are so proud of the great food and experiences we have created in this space and thank the people of the city of Charlotte for the incredible support and patronage in this space. We are thrilled to announce that we will be leaving this space at the end of September and opening our own full-service restaurant and bar on East Blvd at the location formerly known as Fern: Flavors from the Garden.

We will condense our hours of operation at the West Charlotte location with our last day being September 27th. We cannot express our excitement enough as we begin work on this new project and expand on our exciting concept Dōzo in a fresh new environment. In this new space, you can expect all your favorite menu items as well as some new potential favorites as well. We will still offer lunch and dinner, as well as a full bar program, featuring an extensive sake list and Japanese whiskeys. Thank you for an incredible year of support in our little corner in West Charlotte, we look forward to serving you again in our new home on East Blvd!
