Chef John with the Yakiniku Don 👨‍🍳 “Right here we have our spicy beef yakiniku. Filet Mignon we’re marinating in some sesame oil + a little tobanjan like a Japanese fermented chili paste. Add scallions, kimchi, pickled ginger and then some house pickled cucumbers on a bed of rice.”

Chef Spotlight! It has been an incredible 3 months of DŌZO in Dilworth, but we could not have gotten here without the help of our Sous Chef Sam Richardson. Our first new teammate in the Dilworth location, he went from helping us put up ceiling tiles during construction to now training the crew and executing the outstanding food we serve daily at DŌZO.

A Johnson & Wales graduate, Sam has worked in many of the best restaurants here in Charlotte and has been an integral part of building the culture from front to back here.
